Biryani Rice


Recipe how to make a delicious BIRYANI RICE RECIPE


3/4 c Rice Basmati
- or long-grain rice
1 1/2 c Less 2 tbsp water
1 ts Oil
Salt to taste
1/2 lb Chicken
- cut into small pieces
3 tb Oil
1 lg Onion chopped
1/2 ts Ginger paste
1/2 ts Garlic paste
1 ts Ground cumin
1 ts Ground coriander
1/2 ts Turmeric powder
1 Bay leaf
2 Cloves
2 Cardamoms
pn Cinnamon
1 sm Tomato quartered
1 sm Potato
- peeled and quartered
3 tb Plain yogurt
1/4 ts Saffron

Wash rice and put in a small saucepan with all above ingredients.
Bring it to a boil on high heat, then cover and simmer gently until
all the water is absorbed. The grains should be tender but firm. Set
aside uncovered. Heat oil in a large saucepan (medium heat), add
onions and fry till golden around the edges, add garlic and ginger.
All at once add all the spices and fry one minute longer. Add all
other ingredients except saffron. Add salt to taste. Cover and cook
on low heat till chicken is tender, stirring occasionally (about 1/2
hour). There should be very little liquid remaining in the pan.
(During cooking a little water may be added if necessary to avoid
sticking). Add half the prepared rice, spreading it evenly over the
mixture, drizzle one tbsp of oil over it and add the saffron mixed
into two tsp of milk. Cover with remaining rice, cover and cook on
very low heat for ten minutes. Serve accompanied with whipped,
lightly sweetened yogurt. The chicken could be substituted with 1/2
pound of mixed vegetables.

Spaghetti & Meatballs


Kids as well as adults will love this tasty dish. Moms can feel good knowing everyone is getting vegetables as well. If you are a vegetarian, you can easily leave off the meatballs and have yourself a very filling main dish as well.

Ingredient:

1/2 cup onion, diced

2 garlic cloves, minced

1 tablespoon olive oil

1 carrot, diced

5 tomatoes, chopped

1/3 cup water

1/2 cup mushrooms, diced

1 (6 ounce) can tomato sauce

1-1/2 tablespoons parsley

1 tablespoon oregano

1/2 teaspoon marjoram, ground

1 teaspoon sugar

8 ounces dried spaghetti
Meatballs:
1 pound lean beef

1 egg

3/4 ground breadcrumbs

1/2 teaspoon salt


Method:

1. In a large sauté pan on low heat, add olive oil, garlic, mushrooms, carrots and onion. Allow onions to become tender. Add tomatoes, tomato paste, water, parsley and sugar. Bring to full boil then reduce heat to simmer. Allow to cook for 20 minutes stirring occasionally.

2. Cook pasta according to pasta directions. Drain and set aside. Meanwhile preheat oven to 350 F. In a large mixing bowl, add beef, egg, breadcrumbs and salt. Mix well with hands. Shape into 19 meatballs. Lightly oil a baking sheet, arrange meatballs onto sheet and bake 20 minutes.

3. Carefully add noodles into the pan, coating well. Place cooked meatballs in pasta, coat as well. Cover and allow simmering 2 minutes.

Yields: 6 servings

Bukhari Rice

Recipe how to make a delicious BUKHARI RICE


Ingredients :

1-1/2 cups basmati rice

1 whole chicken, cut into 8 pieces


2 cups water
2 teaspoons mixed spice

1/4 teaspoon pepper

1 teaspoon ground cardamom

2 shaiba leaves
1 teaspoon coriander

1/2 teaspoon ground cinnamon


3 teaspoons corn oil


6 whole cardamoms
6 whole cloves

2 medium onions, sliced

3 garlic cloves, diced

2 medium carrots, sliced


2 carrots, grated


6 cherry tomatoes, halved


1/4 cup tomato paste


2 bay leaves
2 shaiba leaves

2 cinnamon sticks


1/2 cup raisins


1/2 cup mixed nuts, fried


2 tablespoons olive oil


Method:


1. Clean and soak rice in warm salted water for 30 minutes. In a small bowl add mixed spice, salt, pepper, cardamom, cloves, coriander and cinnamon. Marinate meat in spices, set aside.

2. In a large sauté pan on medium heat add oil. Add onions and garlic cooking until golden. Add spiced meat, stirring. Add grated carrots, shaiba leaves, tomatoes, tomato paste, bay leaves and cinnamon, stirring well. Add water, stir. Raise heat to high and allow mixture to come to a full boil then reduce heat to low. Cook for 30 minutes. Removes shaiba and bay leaves.

3. Add rice and raisins to mixture making sure rice is covered with broth, add more water if needed. Raise to high heat until a full boil, cover and simmer on low heat until rice is cooked about 25 minutes (do not open the lid what so ever). In a small pan add 2 tablespoons olive oil, carrots and nuts; cook 5 minutes on medium heat.


4. Places rice and meat in a serving dish, arrange sliced carrots and fried nuts on the top of the mixture.

Macaroni with Cheese Sauce

Ingredients :


200g (6.5 oz) macaroni

60g (2 oz) butter

1 onion, chopped

2 rashers bacon, chopped

1/4 cup (30g / 1 oz) plain flour

2.5 cups (600ml / 20 fl oz) milk

1/2 tsp ground nutmeg

1.5 cups (185g / 6 oz) grated Cheddar


Method :

Preheat the oven to moderate 180C (350F / Gas 4). Grease a 1.5 liter ovenproof dish. Cook the macaroni in a large pan of rapidly boiling water until tender, then drain. Heat the butter in a large pan and add the onion and bacon. Stir over medium heat for 4 minutes, or until soft. Add the flour and stir over low heat for 1 minute. Remove from the heat and gradually add the milk. Stir until smooth. Return to medium heat and cook, stirring, for 4 minutes, or until the mixture boils and thickens. Simmer over low heat for 1 minute. Remove from the heat and stir in the nutmeg. Add the pasta and two thirds of the cheese. Stir until combined, then spoon into the dish. Sprinkle with the remaining cheese and bake for 20 minutes, or until lightly golden.

Serves 4

To flavor the milk, bring to the boil with 6 peppercorns, a slice of onion and a bay leaf. Remove from the heat, cover and leave for 15 minutes, then strain and use as above.

Spaghetti Bolognese

How to make a delicious Spaghetti Bolognese

Ingredients :

250g/ 8oz spaghetti

1 onion

100g/ 4oz mushrooms

1 green pepper (optional)

15g/ 1/2 oz margarine

250g/ 1/2 lb minced beef

1 rounded tbsp flour

1 large can tomatoes

100ml/ 4 fluid oz water

1 stock cube

salt, pepper


Method :

Peel and chop the onions and pepper. Wash and slice the mushrooms. Melt the margarine in a large pan. Fry the onions, pepper, and mushrooms for 5 minutes. Add the mince and fry, stirring gently, until it is brown. Stir in the flour, and the tomatoes and stock cube. Add the water if it seems necessary, then add salt and pepper. Bring to the boil, then simmer very gently with the lid on, stirring occasionally, for 30 minutes.

Cook the spaghetti: put a large pan of water on to boil. Add salt. Add the spaghetti and when the water comes back to the boil, cook for 10-15 minutes. Drain in a colander and put on a hot dish. Pour the sauce on top of the spaghetti and serve.

Chicken Fried Rice

Ingredients:
4 Cups Boiled White Rice
2 Cups Sliced Fried Chicken
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Ground Black Pepper
4 Tablespoons Soy Sauce
2 Large Diced Onions
4 Large Beaten Eggs
1 Tablespoon Sesame Oil
1 Cup Of Fresh Bean Sprouts
1 Cup Of Sliced Mushrooms
1 Teaspoon Onion Powder
1 Sliced Hot Red Pepper

Cooking Directions:
The first step is to boil 4 cups of white rice, you can also use brown rice. Heat both oils in a non stick Wok on medium high heat. Once the oil is hot, fry the veggies, and red pepper. Once the veggies are nice and golden, add in the rest of the ingredients. Fry up everything until it is all golden brown. You can also substitute the soy sauce for teriyaki sauce for a different flavor. Serve it hot.
